Spiced Rice

Coming up with new side Mexican rice recipes is somewhat an obsession of mine. I always an looking for that “better recipe”. I have made quite a bit of cilantro lime rice in my day, but the fiance is not a huge fan of the whole cilantro leaves in the rice. So I decided to come up with a hybrid recipe that would take the best of mexican rice and cilantro lime rice and make it into one dish.

Cook the brown rice according to bag instructions:

Add the cilantro, lime, spice mix and olive oil into a food processor.

Spiced Rice

Serves: 4                                                    Prep: 10 min                                         Cook: 30 min


  • 1 1/2 cups brown rice
  • 1 cup cilantro leaves
  • 1 TSP chili powder
  • 1/2 TSP cumin
  • 1/2 TSP onion powder
  • 1/4 TSP pepper
  • 1/4 TSP Salt
  • Juice of 1 lime
  • 3 cloves garlic
  • 2 TBSP olive oil


Cook brown rice according to package instructions.

While rice is cooking, add cilantro leaves, olive oil, lime juice and spices to the food processor. Pulse until liquefied.

Toss with rice until rice is completely covered. Serve and enjoy!
