Twice Baked Potatoes

Sometimes just plain baked potatoes can get a little boring. With only a couple more steps, you can turn plain baked potatoes into amazing, flavorful and creamy twice baked potatoes. The fiance said these are the best potatoes he has ever had. That is pretty high praise for the guy who loves meat and potatoes. These are so easy and delicious. I served them with some pulled rib sandwiches, but these would be great with any main dish!

While your potatoes are in the microwave, get out your mix-ins. Cheeses, butter, green onion and Greek yogurt (or sour cream)

Gently cut the potatoes in half and scoop out the inside, making sure to leave a thin layer of potato. You can use any cheeses you happen to have on hand.

Take all of that scooped out potato and add butter, cheese, green onion, pepper and greek yogurt.

Put the filling back into the potatoes

Sprinkle with more cheddar and Parmesan cheese and place in oven.

Twice Baked Potatoes

Serves: 4                                          Prep: 10 minutes                                       Cook Time: 20 minutes

Ingredients:

FOR THE POTATOES:

2 large russet potatoes, washed

2 green onion, thinly sliced

1 TBSP Unsalted Butter

1/4 cup Plain Greek Yogurt (or sour cream)

1/2 Cup White Cheddar Cheese, Shredded and divided

1/4 TBSP Parmesan Cheese, Grated and divided

1/4 TSP Freshly Ground Black Pepper

Preparation:

1. Wash the potatoes. Poke them with a knife or fork a couple of times. Place in microwave and cook for 8 minutes. Flip potatoes over and cook for another 3 minutes. Preheat oven to 400 degrees F.

2. Gently slice potatoes in half and very gently, scoop out the potato and place in medium bowl. Leave a thin layer of potato inside the skin so that they stay together.

3. Add the pepper and butter to the potato mixture. Stir and let butter melt. Then add half of the cheddar cheese and half of the Parmesan cheese to the potatoes. Finally, add green onion and greek yogurt. Mix to make sure evenly distributed.

4. Place the skins on a baking sheet. Add the filling evenly to all of the potatoes. Top the potatoes with remaining cheeses. Bake in oven for 10 minutes. Then turn on broiler and cook till tops are golden brown, about 2-4 minutes. Serve immediately.
