Citrus Soy Chicken with Soba Noodles

This is the best way to get crispy skin on chicken without frying it. The broiler is a magic portal that transports these chicken thighs to a magical place. Seriously.  Combined with the savory flavors of the soba noodles and the cool crunchiness of the vegetables, this is a great light dinner.


Make marinade:

Place chicken thighs in resealable bag and add 1/2 of marinade:

Citrus Soy Chicken with Soba Noodles

Prep Time: 20 min

Cook Time: 25 min

Serves: 2 people


  • 4 chicken thighs, skin on
  •  1 red bell pepper
  •  1/3 English cucumber
  • 2 green onions
  • 6 oz soba noodles
  • 1 TSP sesame oil


  •  1 clove garlic
  •  4 TBSP soy sauce
  •  1 orange
  • 1 lime
  • 2 TBSP rice wine vinegar
  • 1 TSP ground ginger
  •  salt and pepper
  •  1/4 cup cilantro


1. Make marinade: mince and peel garlic. Pick cilantro leaves off of stem and chop. Zest lime and orange. In a small bowel, add garlic, cilantro, soy sauce, rice wine vinegar, ground ginger, juice of orange, lime ,and a pinch of salt and pepper. Add 1/2 the marinade to a resealable bag with chicken thighs. Seal bag and “smush” chicken around in the bag to evenly distribute marinade. Refrigerate chicken for 3 hours to overnight.

2. Preheat broiler. Chop bell pepper into bite sized pieces. Thinly slice green onion, discarding white parts. Slice cucumber longitudinally into bite sized pieces.

3. Line a baking sheet with aluminum foil.  Place chicken thighs skin side down on sheet. Cook for 5 minutes till top is no longer pink. Flip over and cook till skin is crispy, about 20-25 minutes.

4. Meanwhile, prepare soba noodles. Bring a pot of water to boil. Add soba noodles and cook till tender, about 7 minutes. Drain and rinse with cool water.

5. Add soba noodles back to pot and add vegetables and other half of marinade along with sesame oil. Toss together until evenly distributed.

6. Plate. Take 1/2 the noodle mixture and place on plate. Top with chicken. Garnish with extra cilantro.
